Are you looking for an easy side dish for your family? If you like eggplant and squash this is a great one to try. It can also be made into a main meal by just adding meat. It also makes a great vegetarian meal as well.
Ingredients:
1 eggplant, sliced
2-3 yellow squash, sliced
Onion, sliced
1-2 Tomato, sliced, Beefsteak are great for this but you can use any kind.
Feta cheese- for dairy free try Follow Your Heart vegan crumbles, or for a tangy option, if you can do sheep's milk my favorite is Kourellas sheep feta.
Olive oil
Balsamic or red wine vinegar
Choice of herbs, my favorites for this are:
Rosemary, if you want to try the essential oil I used you can find it here
Thyme,
Garlic
Kosher Salt
Pepper
Directions:
Preheat oven to 450. Prepare pan by laying parchment paper in a square 8 x 8 pan. Slice all of the vegetables and layer in the pan switching between vegetables each row. Check out the video below to see how I do it.
Mix together the olive oil, vinegar, and herbs or essential oils together and stir well. Drizzle over the layered vegetables. Cover the pan with tin foil and bake for 30 minutes, then remove tin foil and sprinkle with the feta cheese*. Place back in the oven for 15 minutes. It's done when the vegetables are tender and cheese is melted. *Note: if using dairy free cheese, depending on the brand the feta may not melt completely.
